Light, Tasty Biscuits

2 cups self-rising flour(sifted) measured after sifted
1/4 cup cooking oil
3/4 cup milk

Grease baking pan real good. Mix all ingredients together. Pinch off and rub around in grease and flip over. Bake 400º for 20 minutes. Then broil for 1-2 minutes until golden brown.

Dill Biscuits

¼ cup butter or margarine, melted
1 Tablespoon finely chopped onion
1 teaspoon dill weed
1 tube (10 oz.) refrigerated buttermilk biscuits

In a bowl, combine butter, onion and dill. Cut biscuits in half lengthwise; toss in butter mixture. Arrange in a single layer in an ungreased 9-in. square baking pan. Bake at 450 deg. for 8-10 minutes.

Bread Machine Yeast Rolls

3/4 cup luke warm water
2 cups all-purpose flour
½ teaspoon salt
3 Tablespoons sugar
1 Tablespoon butter
1 pkg. yeast

Put ingredients as listed into bread machine and turn on. You can either make a loaf with this recipe or take out after it gets through kneading and rising and make yeast rolls. Bake on 350º until golden brown.

Cheesy Sausage Stromboli

2½ cups all-purpose flour
1 Tablespoon sugar
1 teaspoon salt
1 package active dry yeast
3/4 cups warm water
¼ cup warm milk
1 Tablespoon butter
1 pound pork sausage
2 cups shredded mozzarella cheese
2 eggs
½ teaspoon dried basil
1 Tablespoon grated parmesan cheese

In a bread machine combine first 7 ingredients and put on dough cycle. Meanwhile, in a skillet, cook sausage until no longer pink; drain and cool. Stir in mozzarella, 1 egg and basil; set aside. When complete take out and roll into a 15 in. x 10 in. rectangle on a greased baking sheet. Spoon sausage mixture lengthwise down one side of rectangle to within 1 in. of edges. Fold dough over filling; pinch edges to seal. Cut four diagonal slits on top of stromboli. Beat remaining egg; brush over loaf. Sprinkle with Parmesan. Let rise 25 minutes and bake at 375º for 20 - 25 minutes or until golden brown. Slice; serve warm.

Easy Hush Puppies

1 cup all-purpose flour
1 cup cornmeal
1 teaspoon salt
1 green onion, chopped
1 egg
1 Tablespoon baking powder
1 can cream style corn

Mix all together and then spoon batter into hot grease.

The Best Hush Puppies

1 large onion, chopped
½ bell pepper, chopped
2 garlic cloves, minced
1 rib celery, chopped
1 teaspoon basil leaves
1 teaspoon Tony's seasoning
½ teaspoon red pepper
½ teaspoon salt
½ teaspoon black pepper
2 dashes red hot sauce
2 dashes Worcestershire sauce
2 Tablespoons sugar
3 or 4 chopped green onions
1 can cream style corn

Mix all ingredients together. Add ½ cup milk and let set one hour. Add 1½ cups cornmeal, 1 cup self-rising flour, 1 Tablespoon baking powder. Drop by teaspoon into hot deep grease. Fry 6-7 minutes or until golden brown. Better if grease is not too hot.

Mexican Cornbread

½ cup yellow cornmeal
¼ teaspoon soda
½ teaspoon salt
½ cup milk
1 egg, beaten
2 tablespoons bacon drippings or oil
½ can cream-style corn
½ pound ground beef
8 ounces grated cheese
½ large onion, chopped fine

Make a thin batter cornmeal, soda, salt, milk, egg, oil and corn. Cook ground beef, (do not brown) and drain. Mix together the onion and cheese. Heat small amount of oil in heavy (small) iron skillet. Pour half of batter mixture in skillet. Put meat, onions and cheese evenly over batter and cover with remaining batter. Bake at 350º for approximately 30 minutes. Note: I bake mine in a small iron skillet.
